These cheesy grilled potatoes with bacon are an easy foil pack side dish or appetizer for summer! Make it a full meal deal by adding extra veggies or chicken..
PREP 15 MINS COOK 10 MINS SERVES 4.
INGREDIENTS:
450g Terrific Trio Little Potatoes (about 14 potatoes).
1/2 tsp salt.
Pinch pepper.
1 cup cheddar cheese.
2 slices bacon, cooked until crispy and crumbled.
2 green onions, sliced.
DIRECTIONS:.
Place Little Potatoes on a large microwave-safe plate (choose potatoes that are roughly the same size) and cook on high for 3 to 4 minutes, until somewhat tender..
Preheat the grill to medium heat (about 350°F)..
Once potatoes are cool to the touch, slice potatoes thinly..
Lay two large sheets of aluminum foil together (or use a cast iron skillet or grill pan) and spray with cooking spray..
Place one single layer of potatoes on top. Combine salt and pepper and sprinkle one-third over potatoes. Top with one-third of the cheese and one-third of the bacon..
Repeat layers two more times until all potatoes, cheese and bacon are used. Fold up the sides (if using a skillet or pan, you may want to cover with foil to keep the heat in) and pinch the top closed. Place directly on heat, cover grill and cook for 10 to 20 minutes, until potatoes are tender all the way through. (*The potatoes can also be baked in the oven for roughly the same amount of time at 350-400 degrees F)..
Open foil and sprinkle with green onions. Serve immediately..

Smear 1/2 tablespoon butter in the middle of the first piece of foil. Add 1/3 of the potato slices, onion, and bell pepper. Sprinkle with 1/3 of the garlic powder; season with salt and pepper. Fold up the edges of the foil over the vegetables to create an almost leak-proof packet, making sure to seal the edges.Wash and slice potatoes (and onions/mushrooms if using).
Place potato slices (approx 1 potato per packet) and any optional toppings on each foil piece. Top with a generous pat of butter and salt/pepper to taste. Fold each.Preheat your grill.
Cut each potato in two horizontally and then slice it thinly. In a medium bowl, mix mayonnaise, parmesan cheese, garlic, salt, paprika, pepper, and butter. Spray two disposable foil pans with baking spray.There’s nothing like potatoes on the grill.
I used a small foil tin vs. foil packets that I sprayed with Pam to keep everything from sticking. I cut the recipe in half and.Tear off a rather large piece of heavy duty aluminum foil or 2 sheets of regular foil. Place the foil on the counter or other flat surface.
Place the potato slices in a single layer, overlapping very little. in the center of the foil sheet. put 3 or 4dabs of the butter/margarine on top of the potatoes. sprinkle seasoned salt and garlic/onion powder if using on top of the butter/.Combine potatoes and herbs in a large bowl. Arrange the potatoes on a large piece of foil and fold the edges to make a packet.
Place the packets on the grill and cover. Cook for about 20 to 25 minutes, or until potatoes are tender.Bring a large pot of water to a boil.
Add potatoes and simmer for 12-15 minutes, until a fork inserts easily. Heat grill to high (500°F). Drain potatoes, rinse under cold water, and let them sit for a few minutes until they are cool enough to handle.When grill is heated, place packets on gas grill over medium heat or on charcoal grill over medium coals; cover grill.
Cook 30 to 40 minutes, turning packets over once halfway through cooking, until meat thermometer inserted in center of patties reads 160°F and potatoes.Slice onions and red pepper and pile on top of potatoes. Sprinkle the minced garlic, soup mix, thyme, and salt and pepper over the piled veggies. Dot with cubes of butter. Wrap tightly in the tin-foil, and cook on the grill about 30-45 minutes.
Enclose the potatoes in the foil and seal with a double fold enclosing the potatoes completely leaving head space for the steam to build. Grill potato.
